Cooking up a storm!




So its crappy weather outside and I have decided to roll up my sleeves and cook with my husband. We are making Jack Daniels chicken pizza.


Calzone dough ( or buy premade pizza shells )
Mozzarella cheese
Jack Daniels bbq sauce
Several cups of grilled boneless chicken breast ( I drizzel olive oil & a snap of garlic on mine )
Cilantro
Thinly sliced tomato or you can also use diced tomato from the can I prefer the tomato with basil and olive oil mix if using a canned product.

This makes a really yummy different pizza. I will post a picture when its finished!

I like to rub my dough with olive oil before adding the bbq sauce.

I am also premaking lemon chicken with angel hair pasta to freeze for dinner sometime this week.

Lemon Chicken ( alot like Sbarro's Chicken Francese )

5 boneless chicken breasts
5 eggs
romano cheese
parsley
ground white pepper
flour for coating chicken
olive oil
chicken stock
butter
2 lemons


Pound chicken breasts flat and cut in half. Set aside.
Whisk together eggs, Romano cheese, parsley, and white pepper. Set aside.
Put flour in a shallow bowl. Set aside.
In a skillet, heat oil over medium heat.( I use my George Foreman Grill ) Check temperature by dipping a corner of a chicken piece in oil. If it boils slowly, oil is ready.
Coat both sides of a piece of chicken with flour.
Coat chicken in egg mixture, allowing excess egg to drip off, then place chicken in hot oil.
Repeat with remaining chicken.
Fry each side of chicken until a light blond color.
Remove chicken from pan and keep warm.
In the skillet, bring chicken stock to a light boil.
Add butter, stirring constantly, until melted.
Add lemon juice and cook for 1 minute while stirring constantly.
Pour sauce over chicken.

Serve over angel hair pasta, garnish with lemon & parsley. Also mushrooms go well on this. If you dont have alot of money or are out of pasta and dont want to buy all the spices use Ramen noodles. At about 13 cents a package this will add some spicy flavor without having to pay for more ingredients like the parsley or cheese. You can also substitute the fresh lemons with lemon juice from a container.Its a bit cheaper and you will have the whole bottle on hand for next time. Around Thanksgiving time you can stock up (tee hee) on the chicken broth or chicken stock usually 2 cans for around a $1.
